There’s a great café in Whistler, British Columbia, that does the best brunch. Their stuffed French toast is about 4 inches thick and filled with ham and cheese. I’ve never seen anyone finish a full order, but it is delicious. This riff on that dish is a quarter of the size, but still over the top, crazy rich and full of drippy, gooey, sweet, cheesy goodness. I highly recommend a good long walk (or nap) after you’ve wiped the cheese off your chin.
